1. Preheat oven to 180ºC.
2. Line quiche dish with pastry. Blind bake pastry by lining with greaseproof paper and filling with baking weights or beans. Bake for 15 minutes.
3. Remove paper and weight and cook for a further 5-10 minutes.
4. Heat oil in pan and
sauté onion, garlic and bacon until crispy.
5. Stir in mushroom and chicken. Cook for 4-5 minutes. Spread evenly over pastry.
6. Whisk eggs, milk and cheese. Add herbs and season well with salt and pepper.
7. Pour over chicken mix and bake in oven for 30 minutes or until egg mix is set.
